Disclaimer: These recipes aren't mine, I got them from various places over the net and modified them slightly to our taste. If you see yours here, take it as a compliment.
Ingredients:
2 boneless, skinless chicken breasts.
1 tbsp minced garlic
1 tsp ginger
1 tsp lemon pepper
1/2 cup chopped onion
1/2 cup oil (I only used 1/4)
1/2 cup chopped bell peppers
Rub chicken with lemon pepper, garlic, and ginger. Marinate overnight.
Heat oil on m-h, brown chicken.
Remove chicken and cook onions and peppers about 4 minutes, until soft.
Add chicken back to pan, lower heat, simmer, covered for 30 minutes.
Serve with rice, use remaining liquid as sauce for rice.
2:
1 cup cooked, diced chicken
1/2 cup diced mushrooms
1/4 cup pimentos
3 tbsp shortening
3 tbsp flour
1 cup chicken broth
1/2 cup evaporated milk
1 egg yolks
1/4 tsp vanilla (originally called for 1 tsp, I didn't care for the strong flavor)
Salt/pepper to taste
Melt shortening, add flour, stir until thickens. Slowly add broth and milk.
When smooth and boiling add chicken, mushrooms, & pimentos.
Cook 10 minutes, reduce heat to low, add egg yolks. Stir until thickened. Season with salt, pepper, and vanilla, stir again. Serve over pasta.
3:
1 lb coleslaw mix (or 1 can of sauerkraut, rinsed)
2 tbsp butter
1 small chopped onion
1/4 tsp minced garlic
1/2 tsp salt
2 tbsp paprika (Hungarian style if you have it)
3 cups chicken broth
2 lbs cubed pork
1 tsp caraway seeds
1/4 cup tomato paste
1/2 cup sour cream
1/2 cup heavy cream
2 tbsp flour
I modified this recipe for a slow cooker but you can cook over the stove.
Slow cooker: melt butter and brown pork; add in onion, garlic, salt and paprika, cook 4 minutes; put in cooker with broth and tomato paste. Cook slaw/kraut and caraway seeds for 5 minutes, add to cooker.
Low- 6 hours, high- 3 hours
Once dine mix creams with flour, whisk and add to pot, cook additional 10 minutes, serve over noodles or spaetzle.
Stovetop: melt butter, add onion and garlic.stir on m-h for 6 minutes. Add salt, paprika, 1/2 the broth stir and bring to boil. Add pork, slaw and caraway.
In small bowl mix remaining broth with tomato paste, add to pork, cover and simmer on low for 1 -2 hours.
When pork is tender combine creams with flour, whisk, add to pork and cook an additional 10 minutes.
Serving instructions are the same.

Ingredients:
Beef roast cut into slices
2cups beef broth
2 cut, peeled carrots
1 diced turnip
1 cup chopped celery
1 cup chopped onion
1 bay leaf
1 tsp pepper
1 tsp allspice
1 tsp rosemary
1/2 tsp lemon juice
Salt to taste
Sauce:
1/4 cup green onion
6 oz sour cream
2 tbsp horseradish
1 cup whipping cream
Put all but sauce ingredients in slow cooker on high - 4 hours or low - 8 hours (I recommend searing the beef roast slices first).
When done, mix sauce, pour over meat, spoon out vegetables, serve with potatoes.
And there you have it.
Nothing too fancy, all equally liked by us, and not too time consuming.
